Singapore Coffee House brings the spirit of a kopitiam to a very small Canonmills room. The appeal is specific rather than generic: kaya toast, curry puffs, roti canai, nasi lemak and Singapore-style coffee and tea give the menu a clear identity, while occasional Scottish ingredients create a local accent. Current diners repeatedly praise the curry-rich dishes, crisp pastries and sweet, strong drinks. It is a refreshing choice when the group wants breakfast or lunch with more spice and texture than a conventional café provides.

Skua
Skua is a compact basement restaurant built around big flavours, careful sourcing and plates intended for sharing. Its small kitchen keeps the menu concise and changes it daily according to what arrives from farms, fishermen and foragers. The published list is explicitly a sample, but it shows the house language: chickpea panisse with mature cheese and walnut, cured sea trout with whipped cod’s roe, tartare, mushrooms, market fish and combinations sharpened by pickles, herbs or ferments. The result is modern British cooking with a restless, inventive edge.
The low-lit room and natural-wine focus make Skua well suited to a date or a food-led evening with a friend who enjoys ordering widely. The kitchen is ambitious, the service friendly and several plates are designed to surprise. The trade-offs are that the room is tiny, bookings can feel tightly timed and an experimental element will occasionally divide opinion. Treat the sample menu as a statement of style, then let the day’s produce decide the actual meal.

Moss
Moss takes farm-to-table cooking unusually literally. The restaurant is linked to an organic farm in Angus, and its official material says the menu is sourced entirely from Scotland; even parts of the dining room, ceramics and decorative details trace back to the same land.
