INDUS at Park Regis Birmingham is the hotel’s Indian restaurant on Broad Street, with a polished dining room suited to dinner, celebrations and group meals. The concept takes its name from the Indus River and presents the food of the subcontinent through a modern Birmingham hotel setting.
Head chef Manish Patel draws on experience in five star hotels in India, family spice blends and traditional cooking methods. Northern Indian flavours guide much of the menu, and the hotel’s tandoor ovens give the kitchen a valuable way to build smoke, colour and texture into its food.
Signature cooking includes Haddi Wala Gosht, with mutton on the bone in an almond, onion and aromatic spice sauce, and Goan Machhi, a fish curry with coconut milk and toddy vinegar. Vegetarian and non-vegetarian choices are designed for sharing, with rice and breads rounding out the table.
INDUS also brings Indian flavours to afternoon tea, combining savouries such as masala paneer and chicken tikka wraps with sweets including mango bhapa doi, milk peda and rose and raspberry cheesecake. Set menus, dinner service and private banqueting give diners several ways to experience the kitchen.
