Restaurant Folium is an intimate modern British restaurant at 8 Caroline Street in Birmingham’s Jewellery Quarter. Chef Ben Tesh and Lucy Hanlon have co-owned and run the restaurant since 2017. Ben works alone in the kitchen while Lucy leads the guest experience, giving each service an unusually direct and personal character.
Short and long tasting menus follow the seasons and the rhythms of British ingredients. The kitchen works with small farmers and ethical independent fishermen, using whole animal butchery and fin to scale methods to respect each product. Fermenting, pickling and curing add depth while helping preserve ingredients beyond their brief natural peak.
The menu changes continually, but combinations such as chicken liver parfait with burnt onion, biodynamic grain noodles with shiitake and British lamb show its concise style. Dietary requirements need at least 72 hours’ notice, and the small kitchen cannot accommodate every restriction. The current guidance specifically asks guests to discuss severe allergies before booking.
Bespoke ceramics and locally made woodwork extend the restaurant’s interest in craft beyond the plate. Wine pairings are available for diners who want a guided accompaniment to the tasting menu.
