FreshMex is a TexMex burrito bar and 40 seat restaurant on Lothian Road in Edinburgh. The Scottish business began as a pop up food stall in 2015, and its capital location now combines an informal sit in experience with takeaway and delivery seven days a week.
Burritos are assembled to order with lime and coriander rice, refried beans and a choice of fillings and toppings. Diners can use the same customisable format for quesadillas, nachos, rice bowls and salad bowls, while the Cali burrito swaps the usual rice and beans for fresh salted or spiced fries.
Grilled chicken, beef and chorizo chilli, slow cooked barbecue pulled pork and TexMex haggis provide the meat options. Chipotle mixed bean chilli, pulled jackfruit and vegan haggis bring equal variety for plant based diners, supported by vegan cheese and clearly marked gluten free choices.
Fresh salsas, guacamole, rainbow slaw, jalapeños and different sauces let guests adjust richness and heat to their taste. Mexican soft drinks, Scottish beer and cocktails including margaritas and mojitos help turn the quick service format into a fuller casual meal for groups, families or an easy evening out.
