The Wilderness is an intimate fine dining restaurant at 27 Warstone Lane in Birmingham’s Jewellery Quarter. Chef and founder Alex Claridge presents the experience inside a restored factory, using rock, punk and heavy metal as its soundtrack. With only 24 seats, the room keeps diners close to the food and the character of the team.
A single forward thinking tasting menu replaces conventional starter and main course choices. The kitchen changes dishes rapidly, treating surprise and provocation as part of the meal rather than publishing a permanent list of signatures. Traditional fine dining technique is present, but the presentation and tone deliberately avoid stiffness.
Vegetarian, pescatarian and gluten free alternatives can be arranged with at least 48 hours’ notice. The restaurant cannot provide vegan, dairy free or egg free versions of the experience, so dietary needs should be discussed before booking. The format is intended for adults, with older children only able to attend when taking the full menu.
Wine pairings and bespoke wine experiences are available for diners who want drinks integrated with the progression of courses. The restaurant’s Michelin star and other current recognition reflect its technical ambition, but its identity remains deliberately unconventional.
