The Gin Vault is a canalside bar and dining venue at 16 Gas Street in Birmingham. Tucked beneath the Black Sabbath Bridge, the intimate room is designed around a very large gin collection, table service and a cosy atmosphere away from the busier main streets.
A tapas menu is served on Friday and Saturday, with dishes intended for sharing alongside drinks. Choices such as halloumi and prawns provide savoury pairings for the bar’s botanical focus, and bottomless brunches add a more structured food-led occasion.
The kitchen’s limited weekly schedule makes advance planning useful, but dining reservations are available and unreserved tables operate on a walk-in basis. Several small plates can be combined into a fuller meal while keeping the relaxed pace of a bar visit.
More than 470 gins sit at the heart of the drinks list, joined by cocktails, craft beer and other spirits. Guided gin experiences and cocktail masterclasses suit celebrations and groups. The kitchen handles allergenic ingredients in shared areas, so guests with allergies should speak with staff when ordering.

Patatas Bravas

Macaroni in our homemade cheese sauce, with a parmesan, breadcrumb crust. Add chorizo (optional). (V)
Padron Peppers
Padron peppers sautéed with olive oil and sprinkled with sea salt. VE, GF.

Halloumi

This is their base gin, a very pure London Dry Gin, with which they make the whole of the 5th range. Ideal for those seeking a neutral but multipurpose dry gin.
5th Gin Earth 42% Spain
Earth, like its elemental siblings, is infused with its own selection of botanicals as well as being made more traditional spices and, of course, juniper. Earth, has been taken to mean citrus peels in this case, with orange, lemon, tangerine and grapefruit used. It’s artificially coloured yellow, to make it stand out like the others in the range.
5th Gin Fire 42% Spain
Fire is infused with red berries (blueberries, raspberries, strawberries and blackberries) and is coloured to match. Other botanicals include juniper, coriander, angelica, cassia, orris, liquorice, citrus and cardamom.
5th Gin Water 42% Spain
Water is made with an infusion of rose and violet petals alongside traditional botanicals. It’s coloured blue because everybody knows water is blue.

Named after their 3 pugs, Pepsie, Tutu and Mojo, Christine and Stephen Ditchfield brings you this fantastic true small batch craft London Dry Gin. Distilled their copper still named “Silverback”, 3 Pugs contains 8 exquisite botanicals including juniper, basil and orange. This version of the gin is saturated in blackcurrant.

Husband and wife duo Christine and Stephen Ditchfield have gone and united those two wonderful things together to make their very own 3 Pugs Gin. No, they haven’t distilled pugs – they’ve just used their pugs as mascots for their tasty London dry gin, distilled using a combination of 8 botanicals. They’ve also presented it in bottles that lean, because why not?

Vastly different from the juniper-heavy gins of the past, No. 209 opens with a beautifully aromatic nose of predominately citrus and floral notes with a hint of spiciness. First across the palate are the citrus high notes, with lemon followed by a hint of orange. As the spirit warms in the mouth, delicate floral notes are liberated from the bergamot and coriander.
