Passanda: Marinated in herbs and spices, barbecued in the clay oven then cooked in a creamy almond & pistachio sauce. Pathia: Fairly hot, sweet & sour cooked with onions, tomato and green spices. Korma: A preparation of mild spices with fresh cream, almond, sultanas & coconut butter is used to create the delicacy of the flavour & creamy texture. Dupiaza: A maximum quantity of seasoned and fresh onions treated with dozens of spices & herbs to produce a medium hot taste. Vindaloo: A fabulously rich hot taste. Black pepper, lemon, ginger, chilli & a few spices to add to quality – this dish is extravagantly hot. Madras: Fairly hot dish, cooked with tomato & chilli powder.
