Matto Pizza Newington is the group's neighbourhood pizzeria at 29–33 Newington Road in Edinburgh. Opened as its third restaurant, the venue is dedicated to a casual experience centred on freshly made Neapolitan-style pizza.
The dough is prepared fresh each day and slowly proved to develop flavour and the airy crust that defines the style. Pizzas are then baked in a wood-fired oven at around 500 degrees for no more than about a minute, producing a soft centre and quickly blistered edge.
Imported Italian products are combined with fresh local ingredients across a menu of classic and more individual toppings. The focused approach keeps the crust at the heart of every pizza, while sides and desserts can round out a shared meal.
The informal format works for a quick lunch, dinner with friends or collection to enjoy at home. Guests with allergies or dietary requirements should consult the current menu and speak to staff before ordering, particularly about dough ingredients, cheese and cross-contact in the pizza kitchen.
