Aulis London is Simon Rogan’s intimate Michelin starred chef’s table at 16 St Anne's Court in Soho. Hidden just off Dean Street, the restaurant seats only twelve guests around the open kitchen, where each course is cooked and explained in front of them. Executive chef Oli Marlow and head chef Charlie Tayler lead an interactive experience that places ingredients, technique and conversation at the centre of dinner.
The multiple course tasting menu changes continuously according to the produce available, much of it sourced from Simon Rogan’s farm in the Lake District. A current sample begins with intricate combinations such as beetroot with smoked eel and blackberry, crisp chicken skin with smoked cod roe, and cured Cornish mackerel with kohlrabi. These opening dishes use preserving, fermenting and careful seasoning to reveal different sides of familiar British ingredients.
Later courses may move through Dorset blue lobster, raw Belted Galloway beef, roasted Orkney scallops, West Coast turbot and pork neck with lettuce, horseradish leaf and preserved walnuts. Vegetables are treated with the same attention, as seen in courgettes with house miso, onion, yeast and lovage. Because the menu is exploratory, the precise sequence evolves as the farm and trusted coastal suppliers move through the seasons.
Desserts continue that approach through fruit, herbs, cultured dairy and grains, with combinations involving strawberries, buckwheat, apples, gooseberries, chamomile and Kendal mint cake. Several wine pairings and a thoughtful alcohol free flight can accompany the menu, including drinks made with kombucha, sorrel, beetroot and seasonal fruit. The result is a focused evening designed for diners who enjoy seeing how a creative kitchen develops each course.
