The Mediterranean Beluga Bowl combines braised black lentils, sofrito, piquillo peppers, seasonal ratatouille, charred broccolini and parsley salsa verde. The California Bowl uses short grain brown rice with sorrel pesto, preserved lemon, dill, kale, bean sprouts, pickled carrots, golden beetroot and avocado. Both can be paired with grilled chicken, cheese or fish.
Other bowls travel through a wider range of flavours. The Japanese Bowl includes brown rice, adzuki beans, shiitake mushrooms, seaweed, pickled vegetables and mild miso sauce, with yakitori chicken, salmon or tofu available. Thai, Middle Eastern and summer bowls use rice, quinoa, vegetables, herbs, tahini, harissa, tamarind and other distinctive dressings to create varied combinations.
