Moss is an intimate restaurant at 112 St Stephen Street in Edinburgh’s Stockbridge neighbourhood. Chef owner Henry Dobson opened the 26 cover dining room with a focus on Scottish landscape, craftsmanship and hospitality, creating a calm setting for a structured tasting experience rather than a conventional choice led meal.
Scottish seasonality and provenance guide the cooking. Much of the produce comes from Dobson’s family farm in Angus, supported by a network of regional growers, fishers and other small producers. This close connection to ingredients allows the kitchen to build each menu around what is at its best, while preservation helps extend the character of short growing seasons.
The tasting menu changes with the harvest and may move through vegetables, seafood, game and carefully prepared desserts. Fermentation, curing and other preservation techniques sit alongside Scandinavian and Japanese influences, but the cooking keeps the flavour of the central ingredient clear. Guests should therefore expect the sequence and details to evolve rather than rely on a fixed list of signature dishes.
The drinks continue the restaurant’s local outlook with British wine, beer, cider, Scottish tea and house made kombucha among the available pairings. Personal service, the small room and the measured multi course format make Moss best suited to diners who want to spend time with a detailed expression of contemporary Scottish cooking.
