Wiltons traces its history to 1742, when George William Wilton opened a shellfish barrow near Haymarket. The successful business developed into fixed Oyster Rooms, gained a licence to serve wine and beer in 1840 and received a Royal Warrant for oysters in 1868. After operating from several addresses during its long history, the restaurant moved to its present Jermyn Street home in 1984.
Oysters remain central to the restaurant’s identity. The marble Oyster Bar seats guests at the counter and at nearby tables, where they can watch oysters being shucked, smoked salmon being sliced and cocktails being prepared to order. This visible service preserves a direct connection with the shellfish business from which Wiltons grew while offering a less formal alternative to the main dining room.
The kitchen focuses on seasonal British produce, especially wild fish, shellfish and game. Menus change with availability and may include oysters, smoked fish, traditional fish pie, carefully prepared market fish and meat served from the carving trolley. Vegetable dishes, classic puddings and British farmhouse cheeses complete a style of dining grounded in familiar ingredients and established restaurant craft.
Wiltons maintains a formal, discreet atmosphere that reflects its long association with St James’s. The main restaurant, private dining choices and intimate Oyster Bar suit business meals, celebrations and traditional lunches or dinners. A defined dress code, table service and the continued use of features such as the carving trolley give the experience a deliberately timeless character.
