Cycene is an intimate fine dining restaurant within Blue Mountain School at 9 Chance Street in Shoreditch. Its name comes from the Old English word for kitchen, reflecting an experience built around craft, food and the warmth of dining in a private home. A ground floor bar, first floor dining room and adjoining Hearth Room guide guests through distinct stages of the evening.
The main experience is a nine course menu centred on seasonal British produce. Small scale farms, market gardens, seafood suppliers and game provide ingredients at their natural best, while classic techniques draw out flavour without unnecessary weight. The sequence changes with the seasons and uses subtle international influences to place familiar ingredients in more unexpected contexts.
Dinner begins with an aperitif, house made bread and a seasonal broth before moving upstairs to the sixteen cover dining room. Individual courses can bring together cuttlefish, crab, mullet, eel, duck, mushrooms, roots and herbs in precise combinations. The Hearth Room offers a more direct chef led experience for a small group beside the kitchen.
Low intervention wines, rare bottles from the offsite cellar and house kombuchas accompany the food. Bespoke tableware made by collaborating artists links each course to the wider creative work of Blue Mountain School.
