Smokestak is a Shoreditch smokehouse at 35 Sclater Street. The restaurant grew from a street food project launched in 2013 before finding its permanent home three years later, where an industrial interior, low lighting and the scent of burning wood create a setting built around fire.
A large custom smoker sits at the centre of the kitchen and gives meat time to develop dark bark, tenderness and deep savoury flavour. Beef brisket is a defining dish, while pork, ribs and other changing cuts allow the team to explore different combinations of smoke, fat and carefully controlled heat.
Small plates, seasonal vegetables and bread broaden the meal beyond barbecue, bringing acidity, freshness and contrasting texture to richer dishes.
