Seasonal produce comes largely from the regenerative Rowler Farm estate in Northamptonshire, while seafood is sourced from the waters around Tanera Island off Scotland. This close relationship with growers and fishermen allows each menu to follow the quality of the available ingredients. Jayasekara's Sri Lankan background also introduces coconut, pandan, tamarind, calamansi and warm spices to prime British produce.
The signature tasting menu can move through Ceylon king crab, hand dived scallop, wild turbot, native lobster and dry aged lamb.
