Franco Manca Aldwych is a lively sourdough pizzeria on Catherine Street, just off the Strand and surrounded by West End theatres. Its oven and open kitchen sit at the centre of the restaurant, allowing guests to watch the pizzaioli work during lunch, dinner or a meal before a performance.
Every pizza begins with a sourdough culture whose origins reach back to the eighteenth century. The dough is made fresh on site and rises for more than twenty four hours before baking at high heat, creating a light base with a soft centre, blistered edge and gentle tang.
Marinara and Margherita sit beside pizzas topped with Italian tomato, mozzarella, cured meat, anchovies, vegetables, mushrooms, truffle and seasonal ingredients. Vegetarian and vegan recipes are part of the selection, and pizzas can be prepared with a gluten free base when requested.
Olives, Italian snacks, garlic bread, antipasti and desserts can turn a pizza into a longer meal, supported by spritzes, wine, beer, coffee and homemade soft drinks. Outdoor seating, order and collect, takeaway and delivery give theatre audiences, local workers and visitors several practical ways to use the Aldwych branch.
