Franco Manca Islington is a sourdough pizzeria at 72 Upper Street, a short walk from Angel station and Regent’s Canal. The bright dining room places the pizza oven and kitchen at its centre, allowing guests to watch the pizzaioli shape and bake each order.
The foundation of the menu is Franco Manca’s 24 hour sourdough, prepared by hand for a light Neapolitan style base with a raised cornicione. A concise selection of toppings keeps attention on the dough while allowing meat, vegetarian and plant based combinations.
Seasonal specials supplement the core pizzas and make use of ingredients sourced for the time of year. Starters, salads and desserts make a longer meal possible, while dietary and allergen information is provided through the current main menu.
