Franco Manca Waterloo is a relaxed sourdough pizzeria on The Cut, close to Waterloo station, the Old Vic, the Young Vic and the Southbank Centre. Its rustic dining room and convenient Theatreland position make it useful for a quick lunch, a meal before a performance or an informal dinner with friends.

Every pizza begins with a sourdough culture whose origins reach back to the eighteenth century. The dough rises for more than twenty four hours before baking at high heat, creating a light base with a soft centre, a blistered edge and the gentle tang that defines the group’s pizzas.

The menu combines Italian tomato, mozzarella, cured meat, vegetables, herbs and regional ingredients in both traditional and seasonal recipes. Marinara and Margherita sit beside pizzas with anchovies, salami, mushrooms, truffle, burrata or lamb, while vegan specials and gluten free bases support different dietary needs.

Olives, bread, salads, desserts and Italian style aperitivo drinks can turn a pizza into a longer meal. Outdoor seating, order and collect, takeaway and delivery give nearby residents, theatre audiences and commuters several practical ways to enjoy the Waterloo restaurant.
