Manifest Restaurant is an intimate restaurant at 4A Watkinson Street in Liverpool’s Baltic Triangle. Husband and wife team Paul and Charlotte Durand created a relaxed dining room inside a Victorian warehouse, with six tables and counter seats facing the open kitchen.
The cooking is modern British in outlook and changes with the seasons, drawing where possible on local and sustainable suppliers. Foraging, preserving and fermenting help the kitchen build bold flavours and make thoughtful use of produce across snacks, small plates and larger dishes.
Diners can choose from the seasonal à la carte selection or place the meal in the kitchen’s hands through the chef’s choice menu. House breads, preserves, pickles and crisps show the attention given to supporting elements as well as the central meat, fish and vegetable courses.
Wine is integral to the restaurant, with bottles from independent small producers selected to suit the food and many available by the glass. Vegetarian and vegan menus can be arranged, and guests with allergies are asked to note their requirements when booking so the small kitchen can prepare appropriately.
