Hakata Ramen + Bar is an informal Japanese restaurant at 177 Bermondsey Street. Communal tables and bar seating create the close, energetic atmosphere of a ramen shop, with all places offered to walk in customers rather than through reservations. A basement izakaya gives guests somewhere to enjoy a drink when the main dining room is busy.
The signature Hakata tonkotsu uses a pork broth cooked for twelve hours, seasoned with salt tare and topped with chashu pork, pickled ginger, egg, bamboo, beansprouts, spring onion and seaweed. Kumamoto adds wood ear mushrooms, garlic chips and burnt garlic oil. Shoyu, miso and spicy miso recipes use shiitake broth with a choice of pork, chicken or mushrooms.
Every main ramen style is also available in a vegan version built around shiitake broth, tofu karaage, soy mince, mushrooms and vegetables. Noodles are normally served firm but can be cooked softer or even firmer on request, while extra toppings make each bowl easy to customise. Gluten free noodles provide another option after discussion with the restaurant team.
Gyoza, steamed hirata buns, katsu sandwiches, ribs, chicken wings, karaage, kimchi and edamame turn a ramen visit into a shared meal. Mochi soy ice cream provides a simple vegan dessert. Japanese inspired cocktails, local rice lager, pale ale, cider, tea and alcohol free mixed drinks give the basement bar enough depth to stand beside the food rather than merely accompany it.
