Nàdair is an intimate neighbourhood restaurant at 15 Roseneath Street in Marchmont. Chef owners Alan Keery and Sarah Baldry created the small dining room as a showcase for contemporary Scottish cooking, with a relaxed atmosphere and close attention to the ingredients found around them.
Local produce and foraged plants shape menus that change with the seasons. Current set menus move through combinations such as cured trout with apple, sorrel and crowdie, chanterelles with potato and pine, and dry aged duck with wild plum, courgette and sweet cicely.
Diners can choose between shorter and longer set menu formats, while selected services also offer lunch or à la carte choices. A cheese course may be added, and desserts continue the ingredient led approach with combinations of dark chocolate, sea herbs, malt, almonds and hedgerow fruit.
Thoughtful wine pairings are available to accompany the progression of courses. With only around twenty covers, the restaurant provides a focused experience in which careful service, Scottish ingredients and modern technique are more important than an extensive fixed list of dishes.
